Here are some easy but different spring lunch recipes for you and your children to make together to enjoy during the spring season.

Spring Salad Sandwich

Open 'Tater Salad Sandwich


For something a little different, try the following spring lunch recipes for nachos, subs and wraps.

Nachos

Makes 32

What you will need:

    4 large tortillas
    4 large tomatoes, peeled and chopped
    ½ cup bottled salsa
    2 tablespoons fresh coriander, chopped
    ½ teaspoon ground cumin
    1 cup refried beans
    2 green shallots, chopped
    1 ½ cups grated tasty cheddar cheese

1. Cut each tortilla into 8 triangles, using scissors. Place on an ungreased baking tray, bake in a moderately hot oven for about 10 minutes or until lightly browned and crisp. Take care not to burn.

2. In a large bowl, combine the chopped tomatoes, salsa, coriander and cumin. Mix well.

3. Spread a teaspoon of refried beans on each triangle. Top with 2 teaspoons on tomato mixture, sprinkle with combined shallots and cheese.

4. Place on an oven tray, grill until cheeses is melted and browned.

Meat and Salad Subs

Serves 4

What you will need:

    2 x baguette breads approximately 12" long (30 cm)
    8 slices of meat (choose from roast beef, turkey, ham, silverside)
    ¼ cup mustard (your favourite)
    2 tomatoes, sliced
    1 carrot, grated
    ½ cup alfalfa sprouts (optional)
    2 tablespoons sliced black olives
    3 slices tasty cheese
    2 lettuce leaves, shredded
    ½ green capsicum, thinly sliced
    1 small cucumber, diced
    ½ cup chives, finely chopped (optional)
    ½ cup parsley, finely chopped (optional)

    Choice of dressing: mayonnaise, french dressing, italian dressing, sour cream, sweet chilli sauce...

1. Cut baguette in half, lengthways.

2. Spread base with mustard.

3. Top with meat and remaining ingredients.

4. Add dressing of choice.

5. Place sandwich together with top half.

6. Cut in half crossways.

7. Serve.

Caesar Salad Wraps

Serves 4

What you will need:

    4 bacon rashers, chopped, rinds removed
    1/3 cup mayonnaise
    1 clove garlic, grated
    ½ teaspoon mustard
    1 boiled egg, mashed
    2 cups cooked chicken, shredded
    ¾ cup parmesan cheese, grated
    2 lettuce leaves, chopped
    4 sheets lavash bread

1. Cook bacon in frying pan until crisp.

2. Combine mayonnaise, garlic, mustard and egg in a bowl.

3. Add remaining ingredients (except bread) and toss through.

4. Divide mixture between sheets of lavash bread. Roll up firmly. Cut in half.

5. Serve.

Sandwiches are so versatile! Try these spring lunch recipes for some delicious sandwiches.

Spring Salad Sandwich

Serves 4

What you will need:

    8 thick slices of bread
    Mayonnaise
    2 lettuce leaves, shredded
    2 slices tasty cheese
    1 small carrot, grated
    4 teaspoons sultanas
    1 stick celery, finely chopped
    ¼ cup alfalfa sprouts
    1 small tin tuna fish (or cooked chicken if preferred)

    A large cookie cutter (for example; star, butterfly, heart)

1. Spread bread with mayonnaise.

2. Top 4 slices of bread with remaining ingredients.

3. Top each sandwich with remaining bread.

4. Use a large shaped cookie cutter to cut each sandwich into shapes.

Open 'Tater Salad Sandwich

What you will need for each person:

    1 thick slice bread, toasted and buttered if desired
    Lettuce leaf
    1 onion, sliced into rings
    2 tablespoons potato salad
    1 slice ham
    Avocado, sliced
    Tomato wedges
    1 teaspoon french mustard
    1 teaspoon mayonnaise
    Parsley to garnish

1. Arrange lettuce leaf on toasted bread. Add onion rings.

2. Add potato salad on top of ham. Roll the ham slice up and place on lettuce leaf.

3. Add tomato and avocado on top.

4. Combine mustard and mayonnaise. Drizzle on top of sandwich. Garnish with parsley.

5. Serve.
